Pasta salad with tuna and tomatoes

Ingredients
  • 8ounces dried pastapenne, rigatoni or rotini
  • 1/2cup Parmesan cheeseshredded, divided
  • 1cup cherry tomatoeshalved
  • 1/2 cup Bonta canned black olivespitted
  • 2cups fresh arugula
  • 1tbsp olive oil
  • 2tbsp lemon juice
  • 2cloves garlicminced
  • 1/2tsp red pepper flakescrushed
  • 1can Bonta chunk light tunain water
Instructions
  1. Cook pasta according to package directions. Drain and set aside.
  2. Meanwhile, heat oil over medium-high heat; add garlic and red pepper flakes, simmering about 1 to 2 minutes. Stir in tuna, tomatoes and lemon juice, cooking for an additional 3 minutes until tomatoes are tender. Add pasta, arugula and half of the cheese to the skillet, tossing gently.
  3. To serve, divide pasta among plates and sprinkle each with remaining cheese, enjoy!
