Coffee Cake
- 7 ounces Butter
- 7 ounces Golden sugar
- 7 ounces Brown sugar
- 2 cups Bonta flour
- 3 tsp baking powder
- 1/2 tsp Fine Salt
- 2 large eggs
- 5 ounces Sour Cream
Cappuccino Buttercream
- 1 cup Icing Sugar
- 5 ounces Butter at room temperature
- 1 tbsp Instant Coffee, mixed with 1/2 tsp boiling water
- Cocoa Powder for dusting

Instructions
- Preheat oven to 180C/350F.
- To make the cake, put the butter, sugars and 1 cup water in a pan, and heat gently until the butter has melted.
- Take off the heat and stir in the flour, coffee, baking powder, eggs and soured cream. Mix to a smooth batter.
- Pour into a lined 9" X 13" cake pan (leave some parchment paper overhanging to help lift the cake out, once done) and bake for 25-30 minutes, until a skewer comes out cleanly.
- To make the icing, gradually beat the icing sugar into the butter, along with the coffee. Spread all over the cake then dust with cocoa powder.
