Ingredients
- 3 12oz jars Bonta Marinated Artichoke Hearts, drained
- 1/2 cup Bonta canned pitted black olives
- 1/2 large green pepper
- 1/4 large red onion thinly sliced
- 2 cups cherry tomatoes
- 4 oz feta cheese crumbled
For the dressing
- 2 tbsp red wine vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 tbsp chopped fresh oregano
- 1 zest of 1 lemon
- Salt and Pepper to taste

Instructions
- Make the dressing first. In a mixing bowl or measuring cup, whisk together the vinegar, oregano and lemon. Slowly whisk in olive oil to incorporate. Salt and pepper to taste. Set aside.
- In a large serving bowl, combine all salad ingredients but the feta. Add dressing and gently toss to coat. Gently fold in feta with a spatula and serve.
